Cooking Instructions

Temperature 140 deg for 2.5 hours (2 hours if not frozen).
1. Set up sous vide and turn on to 140deg.
2. Season pork chops with salt pepper and seal bags.
3. Cook at temp for 2 hours.
4. Remove pork chops from water and bag. Pat dry.
5. Finish on pan or grill.
For Pan: Heat 2 tbls in cast iron. Place pork chops in pan and add 1 tlbs butter. Cook 45 seconds. Flip and add 1 tlbs butter, thyme, rosemary, garlice. Cook 45 secs. Cook edges. Remove pork chops and rest 2 mins. Reheat drippings and serve on pork chops.
For grill: Cook on high settings for 2 mins, flipping every 20 secs. Rest two mins and serve.
