  • 1 lb boneless chicken thighs
  • 1 pkg NICE bean thread
  • Hawaiian Salt
  • 10 Slices Shitake mushrooms, sliced
  • Dry shrimp, aka opai (same amount)
  • Patis (fish sauce)
  • Soy Sauce
  • Wine
  • Garlice Salt
  • Pepper
  • 1 large onion, sliced
  • Fresh Ginger, 1 finger
  • 1 whole bulb fresh garlic

Helena's Chicken Long Rice
1. Soak noodles, covered with water in large bowl for at least 2 hours. 2. Soak Shitake and shirmp in medium blow, water to cover. 3. Cut chicken into bit size pieces. Add salt, garlic salt, Patis, and wine. 4. In a large pot, saute the sliced onion, sliced ginger and chopped garlic over medium heat until the onion is carmalized. 5. Add chicken to saute, stirring frequently. 6. When chicken turns white, add mushrooms, and shrimp with liquid to the chicken. 7. Cook 5 mins. 8. Take long rice and cut into small pieces with scissors. 9. Drain long rice and add to chicken mixture. 10. Add 1 qt chicken broth. 11. Add to taste: pepper, patis, soy sauce, salt. 12. Cook about 30 minutes. Remove from heat. Add green onion to garnish. Lets set 10 mins.
