Ingredients

  • 4 Medium baking potatoes
  • 1 Tbsp canola oil
  • 4 slices Canadian bacon, about 4 ounces, diced
  • 1 large onion, finely chopped, about 1.5 cups
  • 1/2 tsp each: salt, black pepper
  • 1/3 cup each: cider vinegar, undiluted frozen apple juice concentrate
  • 1/4 tsp liquid smoke
  • Parsley for garnish, optional

Hot German Potato Salad
1. Heat oven to 400. Wash potatoes well and dry throughly. Pierce each potato in several places with a fork. Bake 1 hour; remove from oven and allow to cool until safe to handle. Dice unpeeled potatoes and set aside in a large bowl. 2. Heat oil in a non-stick skillet over medium heat. Cook the diced bacon until lightly browned. Remvoe from the skillet and add to potatoes; do not wash skillet. 3. Cook onions in same skillet, covered, over medium heat until soft, 5 minutes. Uncover and continue to cook until light brown. Add salt, pepper, vinegar, apple juice concentrate and liquid smoke and bring to boil. Add onion mixture to potatoes and bacon, mix well and remove from heat. Serve hot or cold.
