Ingredients
- 4 cups (600g) rhubarb, cut into 1 inch pieces
- 2 cups fresh strawberries, sliced in half
- 3 tbls flour
- tapioca
- corn starch
- 1 1/4 cup sugar
- 1/2 tsp nutmeg
- 3 tbls butter, melted
- 2 eggs, slightly beaten
- 2 unbaked pie crusts
Dad's Strawberry Rhubarb Pie

Cooking Instructions
Preheat oven to 400°F.
1. Place strawberry and rhubarb in a bowl, add flour, tapioca, and corn starch.
2. In 2nd bowl add sugar, nutmeg, melted butter, and eggs.
3. Add fruit to 8 or 9 in pie pan, pour 2nd bowl over fruit. Top with pie crust.
4. Make vents in top crust and sugar coat and bake 30 minutes.
5. Reduce heat to 350°F and finish baking until rhubarb is tender.
