Ingredients

  • 4 cups (600g) rhubarb, cut into 1 inch pieces
  • 2 cups fresh strawberries, sliced in half
  • 3 tbls flour
  • tapioca
  • corn starch
  • 1 1/4 cup sugar
  • 1/2 tsp nutmeg
  • 3 tbls butter, melted
  • 2 eggs, slightly beaten
  • 2 unbaked pie crusts

Dad's Strawberry Rhubarb Pie
Preheat oven to 400°F. 1. Place strawberry and rhubarb in a bowl, add flour, tapioca, and corn starch. 2. In 2nd bowl add sugar, nutmeg, melted butter, and eggs. 3. Add fruit to 8 or 9 in pie pan, pour 2nd bowl over fruit. Top with pie crust. 4. Make vents in top crust and sugar coat and bake 30 minutes. 5. Reduce heat to 350°F and finish baking until rhubarb is tender.
