Ingredients
- Pasta Dough
- 3 cups flour
- 3/4 tsp salt
- 4 egg yolks
- 1 cup fold water
- Filling
- 3/4 lb ground beef
- 1/4 lb ground pork
- 3/4 tsp salt
- pinch of pepper
- 3 pinches fresh ground nutmeg
- 3 egg yolks
- 8 oz can grated parmesan or romano cheese

Cooking Instructions
1. Combine flour, salt, egg yolks, and 1cup cold water. Knead slowly add flour until mixture is no longer sticky.
2. Brown beef and pork until redness is just gone. Drain liquid and cool. Add salt, pepper, nutmeg and egg and gently mix. Add cheese and mix until combined and can form little balls.
3. Roll out dough to about 1/16" thick. Cut dough into 11/4" squares. Place a pea size ball of filling just below a diagonal center line. Fold diagonally pressing edges to form a tight seal. Um... then "Fold and Twist" around the tip of your pinkie, just like Grandma did. Good luck!
