  • White sweet Vermouth

**Mascarpone cheese needs to be at room temperature To make the cream: Separate the eggs. Mix the egg yolks and the sugar. Beat well until smooth. Add the mascarpone cheese and mix well. Whip the egg whites to soft peaks. Fold the egg whites gently into the cheese mixture. Do not mix too much. To Layer: 1. A little cream in the bottom of the pan. 2. Lady fingers that have been dipped into coffee. (you want the lady fingers to be a little crunchy, not soggy but with enough of the coffee flavor, so experiment first) 3. Cream 4. Plain lady fingers 5. Sprinkle these lady fingers with a little vermouth. It doesn't take much. 6. Cream 7. Lady fingers dipped in coffee. 8. Cream 9. Dush with a little unsweetened cocoa.
