Ingredients

  • 6 skinned and boned chicken breast halves
  • 1 tsp onion powder
  • 1/3 cup lemon juice
  • 1 tsp salt
  • 1/4 tsp ground ginger
  • 2 cup sifted flour
  • 2 tsp baking powder
  • 1.5 cup milk
  • 2 7oz pkg coconut
  • vegetable oil
  • sweet and sour sauce

Coconut Chicken
1. Pound chicken and cut into small pieces. 2. Combine lemon juice, salt, onion powder and ginger. Add chicken and stir to coat well. Marinate 30 minutes. 3. Combine flour, baking powder, and milk. Beat until smooth (it will be thick). 4. Drain marinade from chicken and stir into batter. Dredge chicken in flour. Dip chicken in batter, roll in coconut. 5. Heat oil to 375°F. Fry until golden brown about 2 minutes on each side. Serve with sweet and sour sauce. Can be frozen - heat at 350°F for 10-12 minutes.
