Ingredients

  • 1 cup pearl couscous or quinoa/bulgur wheat
  • 1 cup diced cucumber
  • 1 cup diced red onion
  • 1/2 cup finely chopped fresh parsley
  • 1/2 cup finely chopped fresh mint
  • 1 (15-ounce) can chickpeas drained and rinsed
  • 1/2 cup finely chopped roasted pistachios
  • 1/2 cup feta cheese
  • Dressing
  • 1 lemon
  • 1/2 cup olive oil
  • 2 tsp minced garlic
  • 1 tbls honey
  • 2 tbls Dijon-style mustard
  • 1/4 cup red wine vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper

Jennifer Aniston Salad
1. Cook couscous per the package. Transfer to a bowl and refrigerate until cool. 2. Combine all dressing ingredients in a jar. Add 1 tsp lemon zest and 3 tbls lemon juice. Shake well and refrigerate. 3. Add remaining salad ingredients to cooled couscous. Shake the dressing and drizzle over the salad (add to taste, may not use it all). Gently toss to combine.
